Apple Cinnamon Steel Cut Oatmeal


Steel cut oatmeal is delicious, but I rarely take the time to make it simply because it takes a bit too long for my morning routine. This version, however, is so good that I will sometimes make time for it in the morning, or wake up on the weekends to make a warm bowl of it. This is perfect for a fall or winter breakfast!
Apple Cinnamon Steel Cut Oatmeal 3 cups water 1 cup steel cut oats 1/2 cup chopped dates 1 medium apple, peeled, cored, and cut into 1/4″ pieces 2 teaspoons cinnamon 2 Tablespoons brown sugar 2 Tablespoons maple syrup 1/2 teaspoon salt 1/4 cup chopped walnuts 1. Bring water to a boil. When boiling, add oatmeal and reduce heat to low, allowing the oatmeal to simmer. Cover and cook for 10 minutes, stirring occasionally. 2. Remove lid and add remaining ingredients, stirring to incorporate. Cook for 5 more minutes, or until at desired tenderness (no more than 20 minutes, or oats will tend to get soggy). Allow to cool slightly before serving.
